
(Kerala style stir fried or sauteed beetroot)
This colorful and healthy veggie is a part of my everyday meal. Thoran means stir fried veggie seasoned with coconut, mustard and curry leaves.its a dry vegetable preparation and a part of everyday Kerala meal.

you can prepare thoran with different types of vegetables.Here is a simple and easy recipe of beetroot thoran,I add more green chilies to reduce the sweetness of beetroot.This is a very good healthy side dish and it goes well with rice.

- 1 nos beet root large size
- 1/2 cup coconut grated
- 5 nos shallot
- 4 nos green chili
- 3 cloves garlic
- 1/2 teaspoon mustard seeds
- 2 pinchs turmeric powder
- 2 teaspoons coconut oil
- salt
- water

- clean and peel the skin of beetroot.Chop finely.
- remove the skin of shallots and garlic slice it.slice green chili.coarsely grind coconut
- heat oil in a pan(cheena chatty).add mustard seeds.when mustard seeds splutter add sliced shallot and garlic saute well till it become soft.
- then add chopped beetroot, green chili, coconut,salt and turmeric.
- sprinkle little water and mix well.cover with a lid and cook in a medium-low flame till done.
- open lid and stir well until the excess water evaporates and the thoran become dry.
- switch of the stove and serve with rice.
reduce green chili if you don't like spicy thoran
