- 1 bunch red spinach
- 2 cups coconut grated /
- 3 - 4 nos shallot
- 2 - 3 nos chillie green
- salt
- oil

Instructions
- clean spinach and finely chop.keep aside
- chop shallots,slit chillie length wise
- heat oil in a pan splutter mustard seeds.when mustard seeds starts to splutter add shallots saute till it becomes transparent.
- then add chopped spinach chillie and salt
- mix well, then cover with a lid.
- once the spinach almost cooked add grated coconut, mix well.
- cover with lid ,cook for few minutes.
- switch off the stove.serve with rice.
