Separate cauliflower florets and put it in to hot water .
clean and cut onion and capsicum in to squire pieces.clean and chop spring onion.
Make a fine batter of maida,cornflour,chilly powder, red color and salt.
clean the cauliflower drain water completely.
heat oil in a a pan, dip each cauliflower florets in to the batter and deep fry it until golden brown.remove from oil and drain on to a paper towel.
heat oil in a wok, add finely chopped garlic ,saute well.you will get a pleasant aroma of garlic.then add onion. saute well till onion become transparent(do not over fry onion)then add finely cut capsicum, saute for a minute then add chopped celery and 1/2 of the spring onion.saute well then add all sauces.check salt consistency, add salt if needed.
now add fried cauliflower florets.toss them gently.make sure the florets are coated well with sauce.switch off stove.
garnish with chopped spring onion and coriander leaves
