
Curd rice is a very popular in South India especially in the Tamil cuisine.Preparing traditional curd rice is easy and super simple.simply mixing the cooked rice with curd then seasoned with green chili,ginger,mustard seeds,urad dal, asafoetida.This the most simple way of preparing thayir sadam or curd rice.There are different variations but I like this simple method.Curd rice is usually serving with oorugai and poryial (pickle and sauteed vegetables) at the end of lunch or dinner.

- 2 3/4 cups rice cooked
- 1 1/4 - 1 1/2 cups curd thick
- 3 - 4 nos green chili
- ginger a small piece
- 1 pinch asafoetida powder (perum kayam)
- 4 - 5 curry leaves leaves
- 2 tablespoons coriander leaves chopped (optional)
- 1 tablespoon carrot chopped (optional)
- 1 tablespoon urad dal
- 3/4 teaspoon mustard
- salt

- Add cooked warm rice in to a large bowl,mash the rice well,then add curd and salt.mix well.add chopped coriander leaves and chopped carrot, again mix well and keep aside.
- heat oil in a pan splutter mustard seeds, then add urad dal,saute until it become golden.add chopped ginger, and sliced green chili and curry leaves, roast well,add asofitida powder.mix well
- pour it to the rice and serve warm hot or chilled with pickle and sauteed vegetables or serve at the end of meal.
Note:-Use thamil ponni rice or jeeraka samba rice
my measurements:-1 cup=255ml,1/2 cup=120ml
