Today I am posting the recipe of one my favorite snacks.It is a tastiest and popular Kerala snack called beef cutlet.its a favorite and most popular snack among the meat lovers .

what is a cutlet?
Cutlet’s are one of the best savory comfort food,these crispy and savory meet patties are popular in many cuisines with variations depends on their food and calture.Japan has a cutlet called katsu,India and arabs call it Kabab,it can serve as a main dish or side dish,they can also serve as a snack or appetizers with some dipping sauce.
In Kerala we make this cutlets very spicy,we cook beef with spices,then mix it with other ingredients and mashed potatoes then make small patties then coat in breadcrumbs and we deep fry it.its a must appetizer never missed out at parties and special occasions especially in Kerala christian homes.They are super easy to prepare and can be served as a main dish or a tasty appetizer .

The recipe and preparation may seem long but its moves much faster than it looks and the time and effort is worth.you can prepare the mix prior and keep in the fridge that will make your cooking very easy. you can keep the breaded patties in the freezer for a month.

- 1/2 KG beef cut in to small pieces,washed well and drained
- 1/2 tsp turmeric powder
- 1 bayleaf
- 2 tsp whole pepper
- 2 cloves
- 1 small piece cinnammon
- 250 g potatoes
- 2 onion
- ginger medium size piece
- 5-6 garlic peeled
- 5 green chilies
- 1 sprig curry leaves Chopped
- 1/2 tbsp garam masala
- 2 egg whites
- 1 cup breadcrumbs
- 1/4 cup all purpose flour
- 1 1/2 tbsp coconut oil
- vegetable oil to fry the paties

- wash beef under running water,squeeze out as much as water you can.place the beef cubes in a pressure cooker add turmeric powder,black pepper.bay leaf ,cinnamon stick and cloves.add half teaspoon salt and mix well.cover with a lid and cook for 3-5 whistles.then switch off the stove and keep aside until pressure goes naturally
- mean time peel the potatoes and cut it in to medium pieces.then boil or steam the potatoes until it cooks well switch off the stove and drain excess water if you boiled it.then mash it well and keep aside.
- once beef cooked well remove the lid check weather it cooked well or not.if not cooked well cook for few more whistles .if cooked well check there is excess water or not if there is excess water cook in high flame until water evaporates completely .let it cool.
- then transfer it in to a blender and pulse until the beef shredded well.
- heat a a thick bottom pan over medium flame,once the pan become hot add coconut oil in to it
- once the oil become hot add crushed chili ,ginger and garlic.saute well till raw smell goes.
- once the raw smell goes add onion and chopped curry leaves and saute until it become transparent.then reduce the flame and add garam masala,coriander powder and turmeric powder.saute till raw smell goes.
- then add shredded beef and mix well for one minute.
- then add mashed potatoes and combine it well with the beef.check salt consistency ,add if needed.switch off the stove and keep it aside.
- in a wide plate or bowl add bread crumbs ,in another wide bowl add all purpose flour .then add egg whites also in to another bowl.
- take a table spoon full of prepared beef and potatoes mixture make oval shape patties by using your hand.prepare patties until you finish the mixture.keep it in a non sticky plate.
- then coat all patties with all purpose flour one by one ,then dip it in egg whites and coat with breadcrumbs one by one and keep aside in a plate.
- Then heat oil in a vessel and deep fry the cutlets to a golden color
- serve hot with tomato ketchup or green chutney
