Ingredients
- 1 Liver small (approximately 200g)
- 1/2 cup shallot sliced
- 4 nos chilly green
- 1/4 teaspoon ginger garlic paste each
- 1 teaspoon chilly crushed red
- 1/2 teaspoon coriander powder
- 1/4 teaspoon turmeric powder
- 3 pinchs fennel powder
- 1/4 teaspoon garam masala
- 1 sprig curry leaves
- 3 oil table spoon
- 1/2 cup water
- salt as needed

- cut liver in to small pieces.soak this pieces in to turmeric and salt water for 15 minutes.clean well.wash in running water and transfer to a strainer, so that all blood water drains out.
- take a bowl add all powders and salt except garam masala .mix well with little water and keep aside
- heat oil in curry pot add curry leaves. saute well. then add ginger garlic paste saute well till raw smell goes.then add onion saute well till onion becomes soft.then add crushed chilies saute well until the pleasant aroma comes .then add the masala paste saute well until oil separates.
- then add liver pieces and garam masala.mix well with masala,add 1/2 cup of water and cook in a medium flame.after 15 minutes remove lid.check salt consistency.mix the masala well.cook until water evaporates completely.allow the gravy to be thick and completely coated to the liver pieces.
- dry roast it in a medium heat till liver become dark brown.stir in between to avoid burning.do not over cook as the liver will get hard.
- once the liver turned to dark color remove from fire.
- serve with pathiri.
