Chicken is my all time favorite,and this quick stir fry is one of my favorite chicken dishes.Its so easy to make and need minimum ingredients,that are always available in our pantry. I made this chicken with red chili,shallots,ginger,garlic and curry leaves,This chicken is so juicy and finger licking delicious but please use coconut oil for making this recipe.

- 800 g chicken skin removed and cut in to small pieces
- 20 Madras onion (shallot)
- 8 red chili whole crushed in to fine flakes
- 1small piece ginger peeled and crushed
- 4cloves garlic crushed
- 1-1 1/2 teaspoon kashmiri chili powder
- 1/2 teaspoon turmeric powder
- 2 sprig curry leaves
- 4-5 tbsp coconut oil
- salt as needed
- 2-3 pinch garam masala optional

- clean and wash chicken.drain well and place in a large bowl
- Marinate the cleaned chicken pieces with chili powder, turmeric powder and salt.cover and keep aside for 15 minutes.
- Mean time peel madras onion wash and pat dry,then roughly crush the shallots by using a mortar or mixer.
- Then heat coconut oil in a heavy bottom vessel or pan over medium heat,Once the oil become hot add curry leaves and shallots,saute well until shallots become soft.then add crushed ginger and garlic saute until raw smell goes.
- Now reduce the flame and add the chili flakes.saute for a minute then add the marinated chicken and saute in a medium high flame for about 2 minutes
- Then reduce the flame, check salt consistency and add if needed. cover with a lid and cook in a medium flame for 20-25 minutes(stir in between).once cooked well remove the lid and add 2 pinch of garam masala ,give a good stir and cook for 2 more minutes.then switch off the stove.
- Serve hot with pathiri or neer dosa or rice.
