
(Kerala style fried Mutton)

Ingredients
- 500 g mutton
- 1/4 teaspoon ginger paste
- 1/4 teaspoon garlic paste
- 1/2 teaspoon black pepper powder
- 2 teaspoons coriander powder
- 1/4 teaspoon chilly powder
- 1/4 teaspoon turmeric powder
- 5 nos chilly whole red
- 1/4 teaspoon garam masala powder
- 1 cup onion thinly chopped
- curry leaves
- salt
- oil

- Dry roast Red chili.remove it from pan and keep aside
- Reduce flame and add all the powders,saute well until you ge a pleasant aroma and good color,then switch off the stove and immediately transfer the masala to another bowl.
- Add the roasted powder and red chili in to a processor,add little water and grind well in to a fine paste
- clean and wash the mutton,drain water and rub the masala well in to the mutton and refrigerate for 30 minutes.
- heat oil in a pressure cooker. add curry leaves garlic and ginger paste ,saute well. once the color starts brown add the marinated mutton.saute well for few minutes.
- cover it and cook well in a low flame with out adding any water for 4 whistle approximately.switch off the stove.let pressure release naturally.
- heat oil in a pan. add thinly chopped onion and curry leaves .add one pinch salt.
- once the onion turned golden take it away from pan and keep aside.
- Add mutton pieces to the oil and fry it. don't make it too hard.shallow fry until the mutton is brown and its crispier on the out side.
- remove from heat and transfer to a bowl.
- let the maximum water evaporate from the remaining gravy.once the oil comes up pour this gravy in the side of mutton.
- decorate with fried onion and curry levaes
- serve hot
