
Neyyappam is a Kerala Special snack made with rice flour and jaggery .its a very popular and tasty snack with a crispy out side and soft spongy inside.the batter is almost same like unniyappam but the preparation method and shape is different.

we are using banana while preparing unniyappam but here we are not using banana and you can make this in a deep frying pan no need for a unniyappam vessel or unniyappa kara.

The main ingredients are rice and jaggery.Roasted coconut flakes and other ingredients are making this snack so tasty and here is the recipe,try it and enjoy the yummy Kerala style Neyyappam.

- 250 g raw rice (pachari)
- 2 tablespoons maida
- 175 g jaggery
- 1/4 cup coconut sliced
- 1 1/2 black sesame seeds table spoon
- 1/4 teaspoon cardamom powder
- 2 - 3 pinchs soda bicarbonate (optional)
- 1/4 Teaspoon cumin (optional)
- 1/4 teaspoon ginger dried powder (optional)
- 2 pinchs salt
- 1 teaspoon ghee
- oil as needed
- water as needed

- soak cleaned rice for 4-5 hours.
- melt jaggery with 1/2 cup water in a low flame and make a thick syrup,switch off the stove and remove the impurities.
- add this to the rice and grind coarsely.make a fine batter with dropping consistency.if the batter is too thick thin down to batter consistency with water.(the batter should not be too thick or thin, make a batter with dropping consistency)add maida to the batter and mix well.
- heat ghee in a pan then roast coconut slices till light brown. switch off the stove and transfer this to the batter.
- add sesame seeds,cumin seeds,ginger powder, salt and soda bicarbonate to the batter, mix well and keep aside for 1 hour.
- heat oil in a deep frying pan,pour a ladleful of batter and deep fry till golden brown.transfer to a paper towel
- serve hot with tea.
