Onam is just around the corner so today I am posting the recipe of Healthy Oats Carrot Payasam with coconut milk. .This is a quick and delicious payasam.It has a rich flavor of coconut milk and oats.the perfectly cooked carrot made this dessert more delicious.I used very less amount of ghee in this recipe.
I used white Quaker oats,unrefined cane sugar,freshly squeezed coconut milk and ghee for making this payasam. When comparing to traditional payasams this is a healthy version.Oats is a rich source of dietary fiber and minerals.The daily consumption of oats can help to lower cholesterol and blood sugar.Carrots are healthy and it contains a lot of anti oxidants,vitamins beta carotene and fiber.Coconut milk contains significant amount of fat but they are rich in vitamins,minerals and lauric acid.
here I used one medium size carrot and two boxes of grated coconut(Refrigerated).
Making fresh coconut milk is not a difficult task,its very easy.For making coconut milk first add grated coconut to a blender.Then add little hot water in to it, not boiling water just hot water.Then blend well and squeeze with your hands.Then strain through a sieve. this is the first extract of coconut milk.
You can use warm water if you are using fresh coconut.For the second extract add more warm water in to the grated coconut and blend well,then squeeze and strain,repeat the same for third extract too.so fresh coconut milk is ready.

- 3/4 cup oats
- 3/4 cup carrot finely chopped
- 1 cup coconut milk first extract of
- 2 cups coconut milk second extract of
- 2 cups coconut milk third extract of
- 1 1/2 cups cane sugar unrefined
- 10 nos cashewnut
- 1 tbsp raisins
- 2 pinchs cardamom powder
- 1 tbsp coconut fresh thinly sliced
- 1 teaspoon ghee
peel the skin of carrot.wash well and chop very finely.
Add the carrot in to a vessel and cook with little water until carrot become soft and well cooked.
Mean time heat a thick bottom vessel (uruli) and roast the oats for few minutes.no need for a crispy brown just roast until oats become hot.
Then lower the flame and add third extract of coconut milk.Stir continuously for few minutes.
When it become thick add the second extract of coconut milk followed by brown sugar and cooked carrot.with constant stirring in low flame.
when the consistency become thick and oats cooked well add the first extract of coconut milk. stir well for few minutes,do not allow to boil.then switch of the stove.
add cardamom powder and stir well.
heat ghee in a pan,roast cashew nuts,coconut slices and raisins.add this to the payasam and mix well.
serve hot and enjoy.
