- 2 cups ash gourd
- 1/2 cup eyed beans back
- 1 cup coconut milk
- 3 nos green chili
- salt
- curry leaves few
- 1 teaspoon coconut oil

Instructions
- Clean and soak black eyed beans in cold water overnight
- Remove skin and seed of ash guard.Wash well and cut in to small or medium cubes.
- Slit green chili length wise.
- Pressure cook beans with salt and 1 1/2 cup of water(approximately 2 whistle).Let the pressure goes naturally.If there is excess water cook uncovered until water evaporates completely.Switch off the stove and keep aside.
- Cook ash guard with green chili, salt and 1/2 cup of water.once ash guard become soft and tender add the cooked beans in to it,mix well and cook covered for 2-3 minutes,then remove the lid and add coconut milk.
- Cook on a low flame until gravy become thick.then add curry leaves and coconut oil.Check salt consistency .Switch of the stove.
- Serve as a side dish of sadya.
Recipe Notes
if you are not using pressure cooker add ash guard and green chili when 3/4 of the black eyed bean cooked.once the ash gourd cooked well add coconut milk and cook until the gravy become thick.then add coconut oil and curry leaves.check salt consistency.add more if needed.
do not over cook ash guard and beans.
