
Pepper chicken is a very easy and simple preparation of chicken,Its a very spicy delight,black pepper and red chili are the main spices.and it has a delicious flavor of cumin,fennel and curry leaves.there are different varieties of pepper chicken ,Chinese,Kerala,Chettinadu etc,This spicy delight is from chettinadu cuisine,one of my favorite cuisines,I like most of the savory treats from chettinadu cuisine.
I prepared this yesterday for lunch.I always like to have spicy meat and poultry preparations with hot rice,Ratheesh is also a spicy foodie so we enjoyed it yesterday,

chicken cooked in a spicy pepper and chili based masala then roasted well.gravy should be coated the chicken well.it is not a semi gravy.its dry preparation that you can see in the images,but not dry fry.that consistency is the key.

this chicken goes well with rice,chapathi,appam or nan.Here is the recipe of simple,spicy and delicious pepper chicken,enjoy it…

- 1 kg chicken
- 3/4 or 1 tablespoons black pepper whole
- 8 - 10 nos piriyan mulaku whole (kashmeeri chili)
- 1/2 cup shallot (red) chopped
- 1 nos tomato large size (ripe)
- 1/4 cup garlic chopped
- 1 tablespoon ginger chopped
- 1/2 teaspoon fennel seeds
- 1/4 teaspoon cumin seed
- 1 pinch fenugreek
- 1 teaspoon lemon juice
- 1/4 teaspoon turmeric
- 1/4 cup oil + 1 tablespoon
- 3 sprigs curry leaves
- 1 cinnamon medium piece
- 2 nos clives

- Clean and cut chicken in to medium size pieces.wash well and drain water.
- marinate the chicken pieces with salt,turmeric powder and lemon juice.keep aside for 15-30 minutes
- mean time dry roast red chili,black pepper,cumin,fennel,and fenugreek.
- then pound them in to a coarse powder and keep aside.
- heat one table spoon oil in a pan, add cloves and cinnamon saute well,then add chopped shallot,chopped garlic and chopped ginger.saute till it turns to light brown.
- transfer this to a grinder or mixer along with spices powder(the chili and pepper powder which we pound and keep aside previously)grind well in to a smooth paste(if necessary add little water while grinding.)
- heat oil in a kadai add curry leaves,then add pounded masala ,stir in a medium flame till masala become dark and oil separates.(you will get a nice aroma,please don't let it burn,need continuous stir)
- now add chicken and chopped tomatoes mix well with masala.Toss in a medium high flame for few minutes.check salt consistency
- reduce the flame,then cover with a lid and cook till done.stir in between.
- remove the lid and toss in a high flame till masala become dry and it should be coated in the chicken pieces.then switch of the stove.Add curry leaves.
- Serve with rice or chapati ,nan or roti
so yum.
