Coconut rice is a simple rice preparation with a rich coconut flavor.it is very common and famous in the Southern regions of India.Where the rice is cooked in coconut milk and garnished with chili,nuts and grated coconut.There are different variation.You can see this rice preparation all over the wo
soak basmathi rice in cold water for 15-30 minutes.wash and drain.keep aside.
grind coconut along with 2cup of water.strain it and extract coconut milk ,keep aside
slice green chilies,thinly slice the onion.
heat ghee in a thick bottom vessel. add cardamom, cloves and cinnamon in to it,saute for few minutes then add green chili and 1/2 of the thinly sliced onion.saute till onion become soft and transparent.
then add basmati rice , coconut milk and salt to taste.mix well and cook the rice in a medium -low flame(if the milk is not sufficient add 1/2 cup hot water).once the rice boiled add lemon juice.then cook in a low flame.
mean time heat ghee in a pan and fry the cashews and raisins,keep aside
once the rice cooked well switch off the stove.
heat oil in a pan splutter urad dal,then add chili,fry well then add grated coconut saute well till coconut become soft(no need to fry till become brown) .then add this to the cooked rice mix well
serve with red coconut chutney ,pickle and papadam or any gravy of your choice.
