Heat oil in a curry vessel,when oil becomes hot add fenugreek seeds and saute well. when it splutter add cloves, cinnamon ,curry leaves,then add finely chopped onion, garlic and chopped ginger. Stir well till onion turn translucent.
Add finely chopped tomatoes and green chilly. Stir in a high flame. Once the tomatoes are fried well, lower the flame and add chilly powder and turmeric powder.saute well till oil separates.
Once the oil comes up add the cleaned chicken and salt. Stir well for few minutes .
Add sufficient water and cardamom. Cook well(the gravy is not too thick or too thin).stir in between.
once chicken cooked well,Mash chopped shallots in 2 teaspoon pure coconut oil and add this into the gravy (u will get a nice smell). Cover with a lid, lower the flame and cook for few more minutes.
Serve hot with ghee rice.
adjust the amount of chili as per your taste level,use fresh coconut oil.
