Malabar egg biriyani
This is a very tasty and easy egg biriyani recipe adapted from “The epicure cook book”by Ms.Ummi Abdulla.

Ingredients
For Omlette
For Masala

  • 1/4teaspoon chillypowder
  • 1/4teaspoon pepper
  • salt

Instructions
  1. For Omelette:-beat three eggs and add all ingredients for omelet.mix well.make 2-3 thin omelets.cut omelets in to small pieces and keep aside.
  2. For masala:-Heat oil in a pan add thinly sliced onion .saute well till it become transparent.then add crushed green chilies ginger and garlic.fry till it gives out an aroma.add chopped tomatoes and saute for few minutes.add the remaining ingredients and omelette pieces.mix well .then remove from fire.
  3. For rice:-clean,wash and drain rice well.heat ghee in a vessel add cardamom,cloves and cinnamon.saute for few minutes, then add thinly sliced onion ,saute well .once onion become transparent add green chilly ,garlic and ginger paste,saute well .you will get a pleasant aroma.then add drained rice.stir few minutes.add salt and sufficient water to cook the rice.cook well.when rice done remove 3/4 of the rice on to a plate.spread egg masala on top of the rice left in the vessel.do layering till masala and rice finish.cover the vessel with a tight lid and heat over a slow fire for 5 minutes.remove from fire and mix masala and rice together.
  4. for garnishing:-make small slits on hard boiled egg.make a mix of pepper, chilly and salt.mix this to the egg.heat oil in a pan then shallow fry the egg
  5. garnish with fried eggs.
  6. serve with salad and chutney
