  1. Wash the rice well in several changes of water.Then soak for 30 minutes in cold water. clean the mushroom pat dry and slice in to thin pieces.
  2. Melt butter in a large vessel or sauce pan over medium heat.Add minced garlic and fry till fragrant comes.Then add finely sliced onion and saute till onion become lightly brown.Then add mushrooms and stir till mushroom become soft and cooked.
  3. drain the rice and add to the vessel and give a good stir.add 3 cups of stock and check salt consistency, add more salt if needed.Cook covered until rice become soft and tender.switch off the stove. remove the lid and leave to stand for 5 minutes.lightly fork the grains, season with chopped cilantro leaves and serve.
