Oats and carrot Payasam
Payasam is a traditional dessert usually serving in special occasions like Onam Vishu or wedding.This is A delicious and healthy Kerala style payasam,Made with oats, carrot and unrefined cane sugar.This is a quick and delicious payasam with rich coconut milk and oats flavor.

Ingredients

peel the skin of carrot.wash well and chop very finely.

Add the carrot in to a vessel and cook with little water until carrot become soft and well cooked.

Mean time heat a thick bottom vessel (uruli) and roast the oats for few minutes.no need for a crispy brown just roast until oats become hot.

Then lower the flame and add third extract of coconut milk.Stir continuously for few minutes.

When it become thick add the second extract of coconut milk followed by brown sugar and cooked carrot.with constant stirring in low flame.

when the consistency become thick and oats cooked well add the first extract of coconut milk. stir well for few minutes,do not allow to boil.then switch of the stove.

add cardamom powder and stir well.

heat ghee in a pan,roast cashew nuts,coconut slices and raisins.add this to the payasam and mix well.

serve hot and enjoy.
