  1. Clean and cut chicken in to medium size pieces.wash well and drain water.
  2. marinate the chicken pieces with salt,turmeric powder and lemon juice.keep aside for 15-30 minutes
  3. mean time dry roast red chili,black pepper,cumin,fennel,and fenugreek.
  4. then pound them in to a coarse powder and keep aside.
  5. heat one table spoon oil in a pan, add cloves and cinnamon saute well,then add chopped shallot,chopped garlic and chopped ginger.saute till it turns to light brown.
  6. transfer this to a grinder or mixer along with spices powder(the chili and pepper powder which we pound and keep aside previously)grind well in to a smooth paste(if necessary add little water while grinding.)
  7. heat oil in a kadai add curry leaves,then add pounded masala ,stir in a medium flame till masala become dark and oil separates.(you will get a nice aroma,please don’t let it burn,need continuous stir)
  8. now add chicken and chopped tomatoes mix well with masala.Toss in a medium high flame for few minutes.check salt consistency
  9. reduce the flame,then cover with a lid and cook till done.stir in between.
  10. remove the lid and toss in a high flame till masala become dry and it should be coated in the chicken pieces.then switch of the stove.Add curry leaves.
  11. Serve with rice or chapati ,nan or roti
